When I first attempted this I did actually use egg yolks and I wasn’t very happy with the flavor or texture of the final product. It just didn’t taste as good and the yolks overpowered the very light flavor of the green tea. On the second round (the one I published) I used egg whites and was much happier with it overall. It was much creamier and the flavor was perfect for me. However, feel free to make it with whichever you prefer! The recipe’s the same for either whites or yolks. Hope this helps!
